The Nestor Lasso Ombligon Floral Symphony is not a coffee you stumble across. It's a coffee that people — serious coffee people, competition-level baristas, world judges — seek out specifically. And when they find it, they remember it.
Nestor Lasso was in his early twenties when he chose to return to his family's farm in Bruselas, Huila, Colombia rather than take the city career waiting for him. What followed is one of the most remarkable stories in specialty coffee. His farm, El Diviso, became a laboratory of precision and innovation — where an ancient Ethiopian variety called Ombligon is put through one of the most complex processes in coffee: 48 hours of oxidation in circulating mosto, followed by a thermal shock with inoculation, then 20 days of careful drying on raised beds.
The result is a cup that defies easy description. It opens with cherry liqueur and pomegranate. Deepens through dark chocolate. Finishes with a watermelon sweetness that lingers long after the last sip. It is intensely complex, silky in texture, and genuinely unlike anything else we roast.
This is the coffee that Tom Hutchins used at Code Black Coffee to win the Australian Brewers Cup back-to-back in 2024. The coffee that placed in the World Barista Championship finals in 2023. The coffee that carries a cup score above 90.
